Ingredients

- chunk light tuna in oil, drained

- baby spinach

- red bell pepper, roasted, peeled and cut into strips
- 1/2 cup
- Parmigiano-Reggiano cheese shavings
- 125ml
- 1/4cup
- olive oil
- 60ml
- 2tbsp
- lemon juice
- 30ml
- salt and pepper, to taste
Directions
Step 1
In a pot of boiling salted water, cook the tortellini until tender. Drain and let cool.
Step 2
In a salad bowl, toss all the ingredients. Season with salt and pepper.
